Chef Matt Hill’s fresh take on the Southern “meat ’n’ three” concept is serving up all manners of barbecue and wood-fired meats and fish, plus tantalizing sides (think kimchi dirty rice, skillet cornbread, braised greens, and a mac ’n’ cheese recipe passed down from Hill’s grandma), plus breakfast biscuit sandwiches, lunch fare and a creative bar program orchestrated by business partner Todd Salvadore. Housed in a historic building that was once a chocolate factory, the Arlington Heights eatery has a large outdoor patio and a takeout counter. Opened Sept. 30. // 3411 Fifth Street S., Arlington

Chris Zhu, owner of Arlington’s erstwhile China Garden (now located in Rockville), brings an all-day dim sum emporium to Tysons, where buns, dumplings and crepes stuffed with everything from pork and shrimp to more creative options—eggplant, turnip, taro, chicken feet—are made-to-order. La Cocina VA Café

Arlington nonprofit La Cocina VA, which trains immigrants for culinary careers, has a sparkling-new training facility on the Pike, including a sunny ground-level café serving soups salads and sandwiches, along with Dog Tag Bakery pastries and Swing’s Coffee. Come the lunch hour, try The Chimi, a chimichurri chicken sandwich with bacon and tomato on ciabatta. The café will eventually offer dinner service with beer and wine. Opened Sept. 2. // 918 S. Wild Tiger BBQ

Feast on barbecue with an Asian flavor profile, courtesy of this pop-up by chefs Kevin Tien (Hot Lola’s Chicken) and Scott Chung (Bun’d Up), with some added expertise and elbow grease from Sloppy Mama’s pitmaster Joe Neuman. Operating out of Bun’d Up’s Pentagon Row storefront, Wild Tiger is turning out pulled pork, brisket, ribs and other shin-ramen-rubbed proteins, all of which are accompanied by kimchi pickles and your choice of five housemade sauces.
