Don’t look now, but local bars are starting to take spirits seriously. Or, on second thought, do look now. And taste now, because the shelves at these prime-time spots are now groaning with interesting bottles — and bartenders who aren’t afraid to use them. Below, a few of our favorite spots for local libations.
Baba Bar
Yes, it’s connected to a Balkan restaurant. But if stuffed cabbage and goulash aren’t your thing, you can forget all about them once you head downstairs to this narrow, sexy barroom. Along with some of the best-made cocktails in town, you’re also liable to get an education in under-the-radar spirits such as slivovitz and rakia (fruit brandies), and some off-the-beaten-path ingredients, such as plum preserves and beet juice.
Be sure to try: The Malas Palabras, with pineapple mezcal, triple sec, orgeat, lime and Fernet Branca. Think of it as a tiki drink via central Europe.
