Is there anything better than an oozy-gooey grilled-cheese sandwich? It’s that rare dish that tastes great whether it’s raining, snowing or just beginning to show signs of spring. We sampled several around town and these topped the list.

Chef David Guas showcases his Southern roots at Bayou Bakery, and what’s super Southern? Pimiento cheese, of course. It’s the star of the show in his grilled pimiento-cheese sandwich, which features the chef’s own secret blend of domestic sharp cheddars and house-made cream cheese between two slices of Texas toast, slathered in butter. And although it’s grilled, he serves it with a twist: The outside is slightly warm, but the cheese in the sandwich is served cold so as not to lose its texture. Pimiento cheese purists will no doubt approve.
